While in Portland checking out some of the city’s many food trucks and carts, I noticed a particular cart that had a line clearly longer than everyone else. It was a very simple cart, no fancy paint job, but with a huge line so I was intrigued and had to check it out. They offer one thing on the menu, Khao Man Gai, a dish of Thai chicken and rice served with soybean sauce and a side of soup.
It was so simple but executed perfectly. The chicken was extremely tender because it was cooked in chicken stock, which also heightened its flavor. It is served with a small side of soybean sauce, made up of garlic, ginger and chilies. The chicken and rice are wrapped in butcher paper and tied with a rubber band. I can easily understand why this is such a busy food cart and would definitely go back the next time I’m in Portland.
